I have two favourite salads that I always tend to make, one is my mums receipt which she has got from her mum, and the other is the insalata caprese, which I first got introduced to on our Italy vacations. It comes from the region of Campania, Italy. It is a salad to die for, and EVERYONE - even with no cooking experience AT ALL can make this - and wow their guests. Italians don't usually make a dressing like I do, they simply just sprinkle some olive oil and balsamic vinegar on it. However, I like some garlic in my salad, it gives it that extra boost.
You need for 4 people:
2 buffalo mozzarella or other type of mozzarella (needs to be the fresh one as seen in the picture)
4 large room tempered tomatoes
Fresh basil
1-2 cloves of garlic
1/3 dl balsamic vinegar
2/3 dl good olive oil ( 1 dl all up with the vinegar and olive oil)
1 tsp of sugar
pepper for seasoning
How to:
Slice the cheese and tomatoes as seen above. The two ingredients should have around the same thickness.
To make the dressing use a garlic press for the garlic, add it in a glass and add the oil and balsamic, sugar and pepper. Stir well and leave to rest for a bit. Then the sugar dissolves and all the flavours interact.
When its time to serve the salad, pour the dressing over the tomatoes and mozzarella and add the basil leaves.
